Veggie Pho Broth


5-6 carrots

1 Large celery

3 bell peppers

2 yellow onions

2 red onions

2tbs salt

3 tbs sugar

2 tbs mushroom bouillon powder

3 Star anise pods

3 tsp of cloves

Sliced ginger

5 green onions


  1. Chop up peppers and onions into large sections and place them in the oven on high broil for about 6 minutes.

  2. In a large pot, add 7 quarts of water then add the carrots and celery. Bring to a boil.

  3. Add the broiled veggies to the pot and let simmer for 2 hours.

  4. Remove the veggies and strain the broth.

  5. Once strained, add a cup of water, salt, sugar, and mushroom bouillon powder.

  6. In a cheesecloth bag, add the star anise, cloves, and ginger to create the spice bomb.

  7. Add green onions to the broth as well as the spice bomb and let simmer for 20 minutes.
