2 sticks unsalted butter
2 tbs kosher salt
4 tbs if you’re not using bacon fat
2 sprigs of Rosemary finely chopped
2 sprigs of Sage finely chopped
2 sprigs of Thyme finely chopped
2 spoonfuls of bacon fat (optional)
1 head of garlic minced
Lemon zest and juice from 1 lemon
Preheat oven for 430ºF
Put all the ingredients in a bowl and microwave for 30-60 seconds. Should be only slightly melted.
Rub the butter mixture all over the turkey, inside and outside and in every little crevice. The Turkey should be cold so the slightly melted butter will make it easier to spread and will instantly adhere to the Turkey solidifying it.
Cook at 430ºF for 20 minutes.
Lower the temperature to 350ºF and baste the Turkey with the juices. Cover the breast and legs with aluminum foil and cook for another 4-5 hours (depending on how big your turkey is) internal temp should be 165 degrees. Enjoy!!!
