Ingredients
4-6 large tomatoes
1/2 onion
1 bell pepper cut in half
1 head of garlic cut in half
2 sprigs or thyme
Olive oil
Salt and pepper
11/2 cup chicken stock
1/3 cup heavy cream
2 tbs tomato paste
Preparation
Preheat oven 425.
In a baking dish, add tomatoes, bell pepper, garlic, onion, and thyme. Drizzle with olive oil, salt and pepper.
Roast in the oven for 20-30 minutes.
In a blender or food processor add all the ingredients from the baking dish. Also add the chicken stock, tomato paste, and heavy cream and blend.
Salt and pepper to taste. Garnish with fresh basil & enjoy!
