Ingredients
2.5 lbs pork belly
1 onion chopped
5 cloves garlic
2 bay leaves
1/4 cup vinegar
2 tbs minced ginger
3 potatoes cubes
For the marinade
1/3 cup soy sauce
2 tbs dark soy sauce
1 tsp black pepper
1 cup 7up or sprite
Preparation
Cut your pork belly into 1 inch thick pieces. In a bowl mix pork belly, soy sauce, dark soy sauce, black pepper and 7up or sprite.
Let it marinate for at least 30 minutes.
In a Large skillet, add 1 to 2 tbs neutral oil. Sauté Garlic, onions, and ginger.
Add in your pork belly sauté for 5-7 minutes stirring occasionally.
Add bay leaves, marinade, and a cup of water.
Reduce heat to medium and let simmer for 30-40 minutes or until tender.
Add vinegar and simmer for another 10-15 minutes to reduce the sauce and thicken.
Set aside. Sauté your potatoes for 5-7 minutes. Add the pork belly back in and cook for another 10 minutes or until the potatoes are soft and to marry all the flavors.
