Crispy Avocado Tacos 🥑🌮

Ingredients

Red cabbage

Lemon

Tomato

Avocados

Corn Tortillas

Ranch

Sriracha

2 eggs

Italian bread crumbs

Taco seasoning

Flour

Avocado oil


Preparation

  1. Cut cabbage into thin slices and dice a tomato. Placing both into a bowl, add ranch, sriracha, and lemon juice on top then mix well to create the slaw.

  2. Cut avocado into thick slices and set aside. Beat two eggs in a bowl and set aside.

  3. In another bowl, add flower and 1/2 packet of taco seasoning. Mix well. Use a separate bowl to place bread crumbs.

  4. Dip each avocado slice in the eggs, flower, then bread crumbs and place in an air fryer. Spray with avocado oil and fry at 400 for 7 minutes.

  5. Next, fill a frying pan with oil on medium heat and fry corn tortillas. Halfway through, fold them in half to create the taco shell shape.

  6. Once done, let cool and add avocados in the center, then the ranch slaw mix on top. Enjoy!
